Grilled Chicken, Roasted Veggies, Homemade Ranch
This salad is nothing fancy, but don't get me wrong, that doesn't mean it isn't delicious- and better yet, it's as easy as it gets!
It's summer, its hot, the sun is setting late into the night, the kids are running through the sprinkler or playing in the pool... these fleeting summer nights shouldn't be spent slaving in the kitchen and over piles of dishes...
Simple Summer Salad
Here's what you need:
2-3 chicken breasts
2 sweet potatoes
1/2 head of cauliflower
1/2 yellow or sweet onion
garlic powder, pepper, salt, parsley to taste
dressing of choice (though ranch is recommended)
greens of your choice
Directions:
Rinse chicken, pat dry, and season with garlic powder, pepper, salt, and parsley
Throw chicken on the grille and cook until internal temperature of 185 degrees F
Meanwhile, chop sweet potatoes, onions, and cauliflower. Season with salt, pepper, and garlic powder. Roast in oven on 400 degrees F for 30-40 minutes or until tender and browned.
Let veggies and chicken cool. Add veggies to a big bowl of greens. Cut up chicken, add to bowl.
Top with dressing- homemade ranch is preferred.
